2 tbsp olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 carrot, finely chopped

1 celery stalk, finely chopped

1 lb ground beef (or half beef, half pork)

1 can (14 oz) crushed tomatoes

2 tbsp tomato paste

1 cup beef broth or red wine

1 tsp dried oregano

1 tsp dried basil

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Ceramic noodles or traditional spaghetti

Instructions

1. Chop onion, garlic, carrot, and celery.

2. Heat olive oil in a large skillet. Add chopped vegetables and cook until softened.

3. Add ground meat. Cook until browned and crumbly.

4. Stir in tomato paste, crushed tomatoes, broth or wine, herbs, bay leaf, salt, and pepper.

5. Lower heat and simmer for 45–60 minutes, stirring occasionally.

6. If using edible ceramic noodles, cook according to package instructions.

7. Spoon sauce over noodles, garnish with parsley, and serve hot.

Notes

Add a splash of milk at the end to mellow acidity.

Use fresh herbs for a brighter flavor.

Store extra sauce separately for versatile use.
