Ingredients
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup butter (softened)
1 3/4 cups granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup sour cream or buttermilk
1 cup boiling water
2 cups sweetened shredded coconut
1 can (14 oz) sweetened condensed milk
1/4 cup heavy cream
1/2 tsp salt (optional)
Instructions
1. Preheat oven to 350°F and grease three 8-inch cake pans.
2. Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
3. In a separate bowl, whisk flour, cocoa, baking soda, powder, and salt.
4. Alternate adding dry ingredients and sour cream to the butter mixture.
5. Stir in boiling water to thin the batter slightly.
6. Divide batter between pans and smooth the tops.
7. Bake 25–30 minutes. Cool completely on wire racks.
8. Mix coconut, condensed milk, and cream for the filling.
9. Spread coconut mixture between cake layers.
10. Top with ganache or chocolate frosting and garnish.
Notes
Add espresso powder for deeper chocolate flavor.
Chill filling for 10 minutes before spreading.
