This crispy chicken recipe lets you choose between baking powder and cornstarch for your preferred crunch.

2 lbs chicken wings or drumsticks 1 tbsp baking powder 1/2 cup cornstarch 1 tsp salt 1/2 tsp paprika 1/2 tsp garlic powder Vegetable oil for frying

Instructions

1. Pat the chicken dry thoroughly with paper towels. 2. In a bowl, mix cornstarch, baking powder, salt, paprika, and garlic powder. 3. Coat each piece of chicken evenly with the mixture. 4. Let coated chicken rest for 15 minutes. 5. Heat oil to 325°F in a deep pan or fryer. 6. Fry chicken for 8–10 minutes until light golden. 7. Remove and rest chicken for 5 minutes. 8. Raise oil temperature to 350°F and fry again until deep golden and crispy. 9. Drain on a wire rack before serving.

Notes

Use either ingredient or combine both. Oven-fry at 425°F for 40–50 minutes for a lighter option. Spices can be adjusted for taste.
