Ingredients
1 lb lean ground turkey
1/2 cup chopped onion
1 cup canned kidney beans
1 cup canned garbanzo beans
1 cup diced tomatoes
1/2 cup bell peppers, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp cumin
1/2 tsp chili powder
1/2 tsp black pepper
Salt to taste
2 cups low-sodium chicken broth
Instructions
1. Heat olive oil in a pot over medium heat. Add onions and garlic, sauté until fragrant.
2. Add ground turkey, cook until browned.
3. Stir in bell peppers and cook for 3 minutes.
4. Add beans, tomatoes, broth, and spices. Stir well.
5. Simmer on low for 25 minutes, stirring occasionally.
6. Serve hot with optional fresh herbs or side salad.
Notes
For fewer calories, omit oil and sauté with broth.
Double the recipe and freeze leftovers for a quick meal.
