Ingredients
1 lb lean ground turkey
2 medium zucchini, diced
1 small onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced (optional)
2 tbsp olive oil
1 tsp paprika
1 tsp Italian seasoning (or oregano/basil mix)
Salt and black pepper, to taste
½ cup shredded mozzarella or parmesan cheese (optional topping)
Fresh parsley, for garnish
Instructions
1. Dice zucchini, onion, and bell pepper. Mince garlic.
2. Heat olive oil in a large skillet over medium heat. Add ground turkey, breaking it apart with a spatula until browned.
3. Stir in onion, garlic, zucchini, and bell pepper. Cook for 6–8 minutes, until veggies are tender.
4. Sprinkle with paprika, Italian seasoning, salt, and pepper. Mix well to coat evenly.
5. Reduce heat to low, sprinkle cheese over the top, cover, and let it melt for 2–3 minutes.
6. Garnish with fresh parsley and serve warm.
Notes
Swap zucchini for summer squash or add mushrooms.
Use ground chicken or beef instead of turkey.
Add hot sauce for a spicy twist or stir in cream cheese for richness.
