Ingredients

2 medium ripe bananas

2 large eggs

1/2 cup Greek yogurt

1/4 cup almond butter

1/4 cup coconut sugar or erythritol

1 cup whole-wheat flour

1/2 cup almond flour

1 tsp baking soda

1/2 tsp cinnamon

Pinch of salt

Optional: 1/4 cup chopped walnuts

Instructions

1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.

2. In a large bowl, mash bananas.

3. Add eggs, yogurt, almond butter, and coconut sugar. Mix until smooth.

4. In a separate bowl, mix flours, baking soda, cinnamon, and salt.

5. Fold dry ingredients into wet ingredients until just combined.

6. Fold in walnuts if using.

7. Pour into loaf pan and smooth top.

8. Bake for 45–50 minutes or until a toothpick comes out clean.

9. Cool completely before slicing.

Notes

For lower sugar, use erythritol or monk fruit.

Replace almond butter with peanut butter if preferred.

Store in the fridge for up to 5 days or freeze individual slices.
