Ingredients
3 ripe bananas, mashed
2 large eggs
1/4 cup plain Greek yogurt
1/3 cup erythritol or monk fruit sweetener
1 tsp vanilla extract
1 cup whole wheat flour
1/2 cup almond flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
Optional: 1/4 cup chopped walnuts or sugar-free chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
2. Mash bananas in a bowl until smooth.
3. Whisk in eggs, yogurt, sweetener, and vanilla.
4. In a separate bowl, mix flours, baking soda, baking powder, salt, and spices.
5. Fold dry ingredients into wet mixture gently.
6. Add optional mix-ins if desired.
7. Pour into prepared loaf pan and spread evenly.
8. Bake for 50–60 minutes or until toothpick comes out clean.
9. Cool in pan for 10 minutes, then transfer to wire rack.
10. Slice and serve once completely cooled.
Notes
Store in an airtight container for up to 3 days at room temperature or refrigerate for 1 week.
For longer storage, freeze slices and thaw as needed.
Pair with Greek yogurt or nut butter for a balanced snack.
