Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar (optional)
1/2 cup (1 stick) unsalted butter, cold and cubed
3/4 cup cold buttermilk (plus a little extra for brushing)
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
3. Add the cold butter and use a pastry cutter or fingers to cut it in until the mix resembles coarse crumbs.
4. Pour in the cold buttermilk and stir until just combined—do not overmix.
5. Turn the dough onto a floured surface and gently pat into a 1-inch-thick rectangle. Fold over itself 2–3 times for layers.
6. Pat it down again and cut using a biscuit cutter. Place on baking sheet.
7. Brush the tops with extra buttermilk and bake for 12–15 minutes until golden.
8. Serve warm with butter, jam, or gravy.
Notes
For taller biscuits, don’t twist your cutter—press straight down.
Cold ingredients are crucial for flakiness.
